Cottage Cheese Filling
Mix all the ingredients together. Mix for 5 minutes on low speed and then another 5 minutes on high speed. Let the dough rest on the table for 10 minutes.
Mix all the ingredients together until a uniform consistency is achieved (about 2–3 minutes).
Roll out the potato dough lengthwise using a dough sheeter. Dough thickness should be 3–3.5 mm. Spread the cottage cheese filling evenly over 2/3 of the dough. Fold the dough: place the 1/3 without filling over 1/3 with filling, then fold the remaining 1/3 with filling on top. Cut the folded dough into 4 cm wide strips. Twist each strip into a Twister shape and place on a wavy baking tray. After proofing, brush with egg wash and sprinkle with grated cheese.
Proofing time: 45 minutes
Baking time: 14–15 minutes at 210°C / 230°C (depending on the type of oven)
